Here, the chef uses only Italian-imported "00" double-cut wheat flour, which results in crusts with richer flavor and texture. The hand-tossed Red River is one of the house favorites, made with roasted local chicken breast, cheddar, mozzarella and cilantro, and finished with your choice of tangy or spicy barbecue sauce.
